Farmers aren’t the only one harvesting maple syrup. Brooklyn community collectives are doing the same:

Vermont may be the poster-child for maple syrup production but it doesn’t have to be the only one. …. Michigan, Pennsylvania and especially New York all have millions of tappable sugar and red maple trees.

To do so:

Optimal weather conditions for the lost art of maple “sugaring” (aka, harvesting sap and making syrup) require the following rule of thumb: A period of hard frost, followed by warmish days of 40-plus degree weather with evening temperatures that dip to freezing.
